Take out one-third of the mixture and put it into another bowl to keep for the topping. Put the rest of the mixture into the greased pan. Spread it out evenly and then press it down with your hand to make a firm, even layer of shortbread. Use your fingers to press it down in the corners and at the edges. If it seems sticky, dip your fingers in a little flour.

Ask an adult to help you put the shortbread base in the preheated oven to bake for 10 minutes, then remove it from the oven. Let it cool while you make the filling and topping. Leave the oven on.
